While they aren't obliged to do any research or use mythology as some extra footing for Amaterasu, it...would actually be smart of them to at least look up facts about her. Mainly because she's a central figure to the religion and it seems kind of ignorant to not at least do some research on both the religion and the goddess herself.

But, getting to the point of the matter:

Amaterasu has a tendency to be rather lazy and gluttonous. The former of which is shown when she falls asleep after Sakuya revives her spirit in a corporeal form, when Waka is met for the first time (she falls asleep during his blabbering) as well as while the Spider Queen is talking away as well. The latter is really just dealing with with how you can upgrade her Astral Pouch and fill it with so much food.

She doesn't like to bathe - one of the nicknames Issun gives her being "No Bath Ammy" - and she doesn't seem too fond of water in general. I mainly father the non-fondness from the fact that she'll drown if she swims in it too long. Well, sans that cutscene after the sunken ship in which Rao's chest was more or less a flotation device.

She also has a very competitive spirit and this comes out during the (optional) races against NPCs.

She's also really playful too! She loves being pet and showered with attention. You can use her brush techniques to either have people come and give her pets/hugs/scratches or use them to mess around with people. You can also have her screw with the Oina by using the Bloom technique on them and force them to change between their human and wolf forms. She also bats around Issun after meeting Kabegami, playing with the Wall God before getting down to business, which shows her more playful side.

And while she may be a mother, she uses tough love (read: head butts) to make kids stop crying and get their act together.

There's some more but I'm kind of blanking on it at the moment. It's been a long day and I am currently dealing with a loud household and screaming children. But I hope that some of the things that I've said help out a little.
